Vineyard Management & Training: Alberelli (bush) and guyot. 6000 plants/hectare. Vines average 40-50 years old. Yield: 60-70 quintali/hectare
Vinification: Harvested by hand in late November, the grapes are fermented in steel at a temperature below 28C. Malolactic fermentation is in March. Spends at least 12 months in French oak tonneaux and 2 months in bottle before release
Smells & Tastes: Ruby-violet in color, the nose and palate perceive complex notes of raspberries, lavender, licorice, chalk and sweet spices. A wine to savor over a long meal of roasted meats and seasoned cheeses
