Name of Wine: San Vito 2004 Producer: Villa Monteleone Summary: A powerful yet well-balanced red wine. Pairs particularly well with red meats. It is also excellent with strongly flavored soft cheese Alcohol: 13.5% Location/appellation: Valpolicella Classico Superiore [Ripasso] DOC Grape varieties: Corvina, Rondinella, Croatina and Molinara Exposure: South-facing slope Altitude: 220 metres/680 feet above sea level Soil: Alluvial soil. Compact red sedimentary over limestone Vineyard Management & Training: Pergola Veronese. Average age of vines: 20 years / Yield: 55 hl/hectare Vinification: Hand harvested. Fermentation and maceration at controlled temperatures for around 15 days. Periodical pumping over of the must and délestages during the first phase of fermentation, and manual punching down of the cap towards the end of the process. Refermentation over the lees of the Amarone the following year in March / Spends 24 months in large oak casks, 12 months in bottle Smells & Tastes: Complex, floral perfume: ripe cherries, cloves, candied orange peel. Plus peppery notes on the palate. Tastes moderately oaked |
